Ready to Eat Food: Types and How to Choose a Good One

Types of ready to eat food, how to choose a good one and what to check on the label before you buy.

By the MakanHubb teamUpdated 5 min read

Quick answer: Ready to eat food (RTE) is food that comes fully cooked, so you can eat it straight away or after a short reheat. Overall, there are two big groups: frozen or chilled RTE that needs a fridge, and retort RTE that keeps at room temperature for 1 to 2 years.

The RTE market in Malaysia keeps growing, so shelves and online shops offer more and more choices, from frozen nasi lemak to rendang in a pouch. This guide therefore helps you understand the types of RTE, how to choose a good one, and what to check on the label.

Retort RTERoom temperature1 to 2 yearsDishes, pasta sauce, laksa in a pouch
Canned RTERoom temperature2 years or moreCurry, sardines, baked beans
Frozen RTEFreezerA few monthsNasi lemak, dim sum, frozen dishes
Chilled RTEFridgeA few daysSandwiches, salads, bento
Dry RTERoom temperatureA few monthsInstant porridge, freeze-dried food

For home stock, travel and emergencies, retort RTE is the most flexible because it does not depend on a fridge or freezer.

Why more people are switching to RTE

  • Saves time. Meals take only a few minutes because there are no ingredients to prepare.
  • Portion control. Each pack is one serving, so there is less waste.
  • Portable. It also suits the office, hostels, travel and outstation trips.
  • Emergency stock. In addition, the retort type lasts long and needs no electricity.
  • Helps busy families. As a result, anyone in the family can put a meal together quickly when nobody has time to cook.

How to choose good ready to eat food

So here is the checklist we use ourselves when we assess an RTE product:

1. Check the storage instructions on the label

If the label says “store at room temperature”, the product should be commercially sterile, for example retorted. However, if the label says “keep chilled” or “keep frozen”, follow that instruction strictly.

2. Manufacturing date and expiry date

Pick stock that is still far from its expiry date, especially if you want to keep it for a long time.

3. Ingredient list and allergens

The ingredient list runs from the largest amount to the smallest, and you should also check for allergens such as milk, wheat, nuts, eggs and seafood if anyone in the family has an allergy.

4. Nutrition information

First, compare the calories, protein and sodium per serving. Dishes with gravy are usually higher in salt, so balance them with vegetables and plain water.

5. Condition of the pack

Besides that, do not buy swollen, dented or leaking packs, or packs with an uneven seal.

6. A producer you can contact

The label should show the producer’s name, address and phone number, because it is a sign the producer takes responsibility for its product. In addition, in Malaysia the Food Safety and Quality Division, Ministry of Health (KKM) regulates food labels under the Food Regulations 1985.

How to prepare retort ready to eat food

  • Hot water: soak the sealed pouch for 5 to 10 minutes, so it heats through.
  • Microwave: first move the contents to a suitable container, then heat for about 20 seconds.
  • Pan: heat for about 1 minute.
  • Straight from the pack: yes, because the food is ready to eat.

Tip: for a more filling meal, you can also combine a retort pasta sauce with pasta you boil yourself, or a retort dish with hot white rice.

However, RTE is not a full replacement for home cooking. Instead, it is most useful as a backup for busy days, travel and emergencies.

Common mistakes when buying RTE

  1. Assuming all food in a pouch lasts long without a fridge.
  2. Not reading the storage instructions, so you do not know how to keep the food after you open the pack.
  3. Buying many flavours at once instead of trying them first.
  4. Heating an aluminium pouch directly in the microwave instead of moving the food to a container.
