What is retort

Cook, seal, sterilise in a pouch

Retort is the process of heating food sealed in a pouch at high temperature and pressure. The heat destroys bacteria, so the food keeps at room temperature without a fridge and without preservatives. In fact, it is the same method we use for MakanHubb pasta and dishes.

Which foods are suitable?

Suitable for retort

  • Dishes with gravy such as curry and sambal
  • Coconut milk dishes (use boxed santan so the oil does not split)
  • Chicken without bones or sharp bones
  • Regular beef cuts (not tenderloin, wagyu or steak)
  • Seafood: prawns, squid, mackerel, tuna

Not suitable

  • Rice vermicelli, noodles and kuey teow
  • Kuih and cakes
  • Leafy greens
  • Eggs, pastries and pies
  • Fried food and fruit
  • We accept rice and pasta, but they may not last as long
Tips before you bring it in: remove prawn heads and sharp parts so the pouch does not leak. Use packaged coconut milk so the oil does not split. Cut chicken and beef into small, even pieces so they cook evenly.

Before you use the retort service

Taste will change slightly

Colour, taste and texture change after retort. However, this is normal for all retort food.

7-14 day quarantine

Wait 7-14 days after retort before eating or selling. If a pouch bloats, throw it away and do not eat it.

Not a 100% success rate

Also, some pouches can fail (bloat, burst or break apart). There is no refund for failed pouches even when we follow the SOP, because we have already processed the food.
