Retort Food Shelf Life: How Long It Lasts and Signs of Spoilage

The shelf life of retort food, how to read the dates on the pack, how to store it and the signs a pack should be thrown away.

Quick answer: How long does retort food last? The usual retort food shelf life is 1 to 2 years from the manufacturing date at room temperature, as long as the pack has not been opened, swollen, leaked or been damaged. Once opened, eat it right away or keep it in the fridge and finish it within 1 to 2 days.

This is one of the questions we get most often. The answer depends on the type of food, the container and how it is stored. This guide explains why retort food keeps so long, what affects retort food shelf life, how to read the dates on the pack, how to store it properly, and the signs that a pack should be thrown away.

Why retort food lasts so long

Retort food is sterilised after it is sealed. Heat of around 121 degrees Celsius kills bacteria and spores, and the sealed pouch stops new germs from getting in. With no living microorganisms inside, the food does not spoil even when it is kept at room temperature.

What changes over time is the quality, not the safety. Taste, colour and texture slowly decline, especially if the pack is exposed to heat or light. That is why producers print an expiry date even though the product is still sterile.

Retort food shelf life: the expiry date on the pack
Every MakanHubb retort pack has a manufacturing date and an expiry date.

Retort food shelf life by type of food

TypeEstimated shelf life (unopened)Notes
Dishes with gravy, curry, rendang1 to 2 yearsOil can separate, stir before eating
Pasta sauce1 to 2 yearsMilk-based sauces may thicken after a long time
Pasta and rice in a pouchAround 1 yearTexture gets softer if stored a long time
Canned food2 years or moreAvoid cans dented at the seams

The figures above are a general guide to retort food shelf life. Follow the date on the pack, because each producer sets the shelf life based on testing of its own products.

How to read the dates on a retort pack

  • Manufacturing date (MFG): the day the product was retorted.
  • Expiry date (EXP): the last date the producer guarantees the quality and safety of the product.
  • Batch number: helps the producer trace a problem if there is a complaint.

In Malaysia, food labels are regulated under the Food Regulations 1985. Do not eat a product that is past its expiry date.

How to store packs so you get the full retort food shelf life

  1. Keep them somewhere dry and shaded. Avoid direct sunlight and hot spots such as the top of the fridge or a car parked for a long time in the sun.
  2. Do not stack heavy or sharp items on them. Soft pouches can be punctured or the seal can be put under pressure.
  3. Arrange by date. Use first in, first out. Put older stock at the front.
  4. No fridge needed before opening. Chilling a sealed pack does not extend the expiry date.

After opening: how long can you keep it?

Once the pack is opened, retort food is the same as ordinary cooked food. Bacteria from the air and from spoons can get in.

  • Eat it right away, or within 2 hours at room temperature.
  • Move any leftovers into a covered container and keep it in the fridge.
  • Finish it within 1 to 2 days and heat it until it is piping hot before eating.
  • Do not store it again in the opened pouch.

Signs a retort pack should be thrown away

Throw it away without opening or tasting it if you see any of these signs:

  • The pack is swollen or puffed up
  • The seal is open, leaking or sticky
  • The pouch is torn, punctured or has animal bite marks
  • A sour, rotten or unusual smell once opened
  • Cloudy, foamy or slimy liquid
  • It is past the expiry date
Important: A swollen pack can be a sign of dangerous bacterial growth. Do not open it to “have a sniff”. Wrap it up and throw it away. If you bought the product from MakanHubb, take a photo and refer to our return policy.

Factors that shorten retort food shelf life

  • Prolonged heat. Speeds up changes in taste and colour.
  • Packs that are pressed or folded. This can damage the layers of the pouch.
  • Rough handling during delivery. That is why we pack with bubble wrap and thick boxes.
  • Uncontrolled processing. Retort products without temperature records and quarantine are more likely to fail before the expiry date.

FAQ: retort food shelf life

Can I eat retort food after the expiry date?

Not recommended. The expiry date is the limit the producer guarantees. After that date, quality and safety are no longer guaranteed.

Do I need to keep retort food in the fridge?

Not before opening. After opening, yes, and finish it within 1 to 2 days.

Why does oil separate in the pack?

This is normal for dishes with coconut milk or sauce. Stir or gently squeeze the pack before opening it.

Can I freeze retort food?

There is no need, and freezing can change the texture. Keep it at room temperature only.

How long does MakanHubb retort food last?

Our retort products last 1 to 2 years from the manufacturing date. Every batch is quarantined for 7 days before it is sold.

Is retort food safe to take overseas?

It depends on the rules of the destination country. Many countries restrict meat and chicken products brought in by passengers. Check the official customs website of that country before you fly.
